Cabernet Sauvignon is the only wine that has its own holiday (the Thursday before Labor Day). Pahlmeyer Cabernet Sauvignon is one of the wines that is celebrated on this day. The intensity of this wine is first revealed by its garnet core and then from the concentrated aromas of dark black cherry and coffee. This wine is nicely lifted by notes of candied red fruits, sarsaparilla, and a hint of leather. Upon entry, its showy and plush Merlot and floral, fleshy Malbec leap forward, followed by more subtle dried grass and tea flavors from the Cabernet Franc. It is also immediately balanced by the grip of savory old vine Cabernet Sauvignon and brooding Petit Verdot. The palate consists of a cooling swath of pebbles as the fine-grained tannins culminate into a finish that is pleasurable and that lasts a long time.
